Ridges have always been there, apart from TOS.

Not just TOS - the Romulans in STV and STVI were ridgeless as well. Again, the Romulans are a group of Vulcans that have only lived off-world for a couple thousand years, and I've always thought that the TNG-era ridges were a silly and unnecessary addition.

When were the Romulans in STVI?

We saw the Romulan ambassador in the President's office and at Khitomer.

I'm in that camp as well. If nothing else I can call them a racial feature, some Romulans have them other's don't.

One interesting thing was that in "Unification", Spock was able to pass as a Romulan without having ridges.

Aye, I'm with you there. The ridges are pointless, and just there to make them look slightly more alien.

Nevertheless, its about what your used to I guess. I know Romulans with ridges, as I was introduced to Romulans with them not without. for precisely that reason, the TOS and Movie Romulan's dont sit right. Same with Klingons. I know ridged Klingon's because thats how they were introduced. Therefore, the TOS Klingon's dont make me think "ooo its a Klingon".
